This is a Healthy Mexican Food – Meal with an irresistible combination of pork with red beans and soft tortillas.

For 8 people – 8 servings. An equal portion contains
1 kg pork fillet or steak without bones.
teaspoon crushed coriander.
fresh pepper, cleaned and chopped.
clove of garlic, steamed.
a spoonful of lime juice.
2 tablespoons sunflower oil.
100 g of onions finely chopped.
400 to 450 grams of red beans from a can. washed and squeezed.
200 grams tomatoes without peels and seeds chopped into cubes.
salt and pepper to taste.
16 + pieces of tortillas.
around 600 calories
8 grams of fat of which 1 gr. saturated.
around 6-7 mg of cholesterol.
around 81 gr. carbohydrates.
around 9 grams of fiber.
around 40-45 grams of protein.
Preparation time: Cooking Time:
45 minutes. 20 minutes.
For the time of serving prepare:
8 tablespoons yogurt, low-fat.
2 tablespoons of fresh mint.
3 limes cut into pieces.

Preparation:

The fat around the pork meat will give you a more pleasant taste of your meal. But of course, if you want to eat it healthier just remove the fat from the pork meat. Cut it the pork meat into thin tiny pieces and place it into a plate with coriander. Then add hot pepper, garlic and lime juice to taste well. Then mix it well to spread the mixture evenly. Let it stand for 25 minutes in a bowl, and cover it the bowl.

Preheat olive oil in a pan and sprinkle 100 grams of onions, on low heat stir the onions for 3 to 4 minutes until they start to change the color to red. Then add the meat and let it fry together for a few minutes(no more than 10 minutes) until it starts to change the color. Then add the beans and tomatoes, and then spice well and leave to simmer for 3 to 5 minutes to soften tomatoes.

Turn on and heat the oven to 180 degrees. Then heat the tortillas on both sides for one minute. Spread it the pork on the tortillas proportionally. Over each tortilla pour yogurt and mint and then roll the tortillas. Pour lime juice for a better taste.
